In this short photoshop tutorial you will learn how to colorize different parts of a lime fruit using layers blending mode.

1.
I started by cutting out my object from the scene, to make the image simple.
Now grab the pen tool from the main toolbox and in a new layer, click around one of the inside shapes of the lime fruit.

In the layers panel, right click the new shape layer and click rasterize layer to make it a normal layer.

Just above the layer is a roll down menu for layers blending modes, choose Overlay.

While still having the shape layer selected go to image -> adjustments -> hue and saturations and make settings like in the image below.
